I'm always looking for healthy recipes that are also yummy, and this seems to be one I use often! I found this recipe in Betty Crocker, but I changed it a little to make it healthier and add a few things I like. I LOVE baked goods, especially muffins, but my figure doesn't love them, so that's why this recipe works out best! Hope you all enjoy! Ingredients:
3/4 cup rolled oats |
1/4 cup grape-nuts cereal |
1 cup whole wheat flour |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
1 egg |
3/4 cup unsweetened applesauce |
1/2 cup soymilk (or fat-free milk) |
1/4 cup honey |
1 tablespoon olive oil |
1/2 cup craisins |
1/2 cup walnuts (optional) |
Directions:
1. Lightly coat 12 2 1/2 inch muffin cups with cooking spray, set aside. 2. Combine oats, grape nuts, whole wheat flour, baking powder, baking soda, and salt in bowl. 3. In separate bowl, combine egg, applesauce, milk, honey, and oil. Add mixture to dry ingredients. 4. Fold in craisins and walnuts. 5. Divide evenly among the 12 muffin cups, bake in a 375 degree oven for 16 to 18 minutes. 6. Enjoy! |
