1 egg |
2 egg whites |
1-3/4 cups packed brown sugar |
1/4 cup canola oil |
1/4 cup unsweetened applesauce |
1 teaspoon vanilla extract |
1 cup king arthur unbleached all-purpose flour |
1 cup king arthur premium 100% whole wheat flour |
1 teaspoon baking sdoa |
1 teaspoon salt |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
2 cups chopped peeled apples |
2 cups fresh cranberries, halved |
1/2 cup chopped walnuts |
2 teaspoons confectioners' sugar |
Directions:
1. In a bowl, beat the egg, egg whites, brown sugar, oil, applesauce and vanilla. 2. Combine the dry ingredients; stir into applesauce mixture just until blended. Fold in the apples, cranberries and walnuts. Pour into a 13-in. x 9-in. baking dish coated with cooking spray. 3. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar. Yield: 15 servings. |
