Autumn is when I really get into cooking - I get inspired by the cool weather and the holidays! Made this up one afternoon and it quickly became a family favorite. Great warm or cool - and a little vanilla ice cream or whip cream is fantastic! Read more ! Can easily be doubled to fit a 13 x 9 pan; 12 servings. Ingredients:

3 medium baking apples, peeled and sliced, 3 cups |
1 cup fresh cranberries (1/2 bag) |
1 tsp. orange zest |
1 tbsp. flour |
1 tbsp. sugar |
topping |
3/4 cup packed brown sugar |
1/2 cup flour |
1/2 cup quick-cooking or old-fashioned oats |
1/2 cup sliced almonds (optional) |
3/4 tsp. ground cinnamon |
3/4 tsp. ground nutmeg |
⅓ cup butter, softened |
Directions:
1. Preheat oven to 375° F. 2. Grease bottom and sides of an 8 x8 inch baking dish. 3. For the filling, in a large bowl, mix together the flour, sugar and orange zest. Add the apples and cranberries and toss to coat. Pour into prepared baking dish. 4. For the topping, in a medium bowl, add all topping ingredients except the butter and mix well. 5. With a fork or wooden spoon, work in the butter until well incorporated. The mixture will be loose and crumbly. Evenly sprinkle the topping mixture over the apples and cranberries. 6. Bake about 30 min. or until the topping is golden brown, the apples are tender when pierced with a fork and the cranberries have burst. 7. Serve warm with vanilla ice cream and/or whipped cream. |
