Ingredients:
2 cups cornmeal |
1/2 cup all-purpose flour |
1 tablespoon baking powder |
2 teaspoons salt |
1 egg, beaten |
2 cups milk |
1 cup cracklings |
Directions:
1. Combine cornmeal, flour, baking powder, and salt; stir in egg and milk. Add cracklings to batter, stirring well. 2. Heat two well-greased muffin pans in a 400° oven for 3 minutes or until very hot. Pour batter into hot muffin pans, filling two-thirds full. Bake at 350° for 30 minutes or until golden brown. |
