This is a southern twist on cornbread. The subtle saltiness of the cracklings goes well with beans and cooked greens.
Ingredients:
1 cup yellow cornmeal
1 cup buttermilk
1/2 cup all purpose flour
1/2 cup pea-size cracklings
1 egg
1 tbsp. bacon grease
2 tsp. sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
Directions:
1. Preheat oven to 450 degrees F.
2. Heat a heavy 10 inch iron skillet in oven for 5-10 minutes.
3. Mean while, in a bowl combine flour, cornmeal, baking powder, salt, sugar, and baking soda. Mix well.
4. Add buttermilk, egg, and cracklings, beat until well blended.
5. Remove skillet from oven, add bacon grease, coat skillet evenly.
6. Pour batter into skillet. Bake for 25-30min. Serve very hot!
