Pudding
Ingredients:
2 cups milk
2 egg yolks,beaten
1/2 cup sugar
1 cup saltine crackers,coarsely crushed
1/2 cup coconut,shredded
1 teaspoon vanilla
2 egg whites
Directions:
1. Gradually stir milk into yolks in a saucepan.
2. Add 1/4 cup of the sugar.
3. Cook and stir over medium heat till thick and bubbly.
4. Remove from heat and stir in crackers,coconut and vanilla.
5. Pour into 1-quart casserole.
6. Beat the albumen till soft peaks form.
7. Gradually add remaining 1/4 cup sugar,beat till stiff peaks form.
8. Spread meringue over hot pudding.
9. Bake in a 350 degree oven for 12 to 15 minutes.
