Found this on the net when looking for something to do with leftover chicken. So easy and oh so good. Ingredients:
3 cups of your favorite cornbread, crumbled |
1 stick butter, melted |
1 small onion, chopped |
1/4 cup celery, chopped |
salt and pepper to taste |
1 can cream of chicken soup |
3/4 cup chicken broth |
2 1/2 cups cooked chicken, bite size |
Directions:
1. Preheat oven to 350 2. Grease 8 x 8 baking pan 3. Add 1/2 cup melted butter to cornbread crumbs amd mix well, set aside 4. In skillet on low melt remaining butter and saute onions and celery until tender 5. Add chicken broth, cream of chicken soup, salt and pepper 6. Stir until well blended 7. Add chicken and heat through 8. Put chicken mixture in baking pan 9. Spoon cornbread topping onto top of chicken mixture 10. Bake 35-40 minutes |
