Always trying new ways to re-invent side dishes, I was inspired by a stuffed pepper recipe that I had to try this. It came out great! It can be a meal instead of a side dish, but I served it with a simple pasta dish. Ingredients:
1 pound crab meat, picked through so there are no shells |
6 tomatotes |
salt and pepper to taste |
3 tablespoons butter, melted |
1/4 cup chopped parsely, more for garnish if desired |
1/4 cup chopped celery, remove strings from celery before chopping. |
1 tablespoon fresh lemon juice |
1/4-1/2 cup grated cheese, use something mild like provolone or monterey jack |
1/4 cup dry bread crumbs |
Directions:
1. Wash tomatoes. 2. Remove stem ends and the centers, keeping whole tomato in tact. 3. Sprinkle tomatoes with salt and pepper. 4. In a bowl, combine butter, parsley, celery, lemon juice and crab meat. 5. Fill tomatoes with crab mixture. 6. In a bowl, combine cheese and bread crumbs. 7. Sprinkle cheese mixture over top the tomatoes. 8. Place tomatoes in a well-greased baking dish. 9. Bake in a 350° oven for 20-25 minutes until tomatoes are tender. 10. Remove and serve while hot. |
