Crab Stuffed Twice-baked Potatoes |

A slightly different version for the mundane potato. Can be used as a special lunch also. Filling and yummy. Ingredients:
3 large baking potatoes |
1/2 cup more or less sour cream |
1/4 stick butter |
1 jalapeno pepper minced |
1 clove garlic minced |
2 green onions sliced thin |
1 tsp kosher salt |
3 turns of black pepper mill |
1/2 cup mozzarella cheese cut very small pieces |
1/2 to 1 cup minced lump meat crab |
Directions:
1. You can micro potatoes however I find oven baking 2. gives a firmer skin 3. Bake remove from oven and cool slightly 4. remove potato from skins and place in bowl 5. mash roughly and add crab and cheese and fluff with fork 6. in heated pan melt butter and add pepper onion and garlic; salt and pepper 7. cook just until softened 8. add to potato/crab mixture 9. mix gently 10. place mixture in the six potato skins 11. heat oven to 325 12. place potatoes on cookie sheet and heat in oven 13. serve with dollop of sour cream on top with fresh chopped parsley (optional) |
