CRAB STUFFED SNOW PEAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Webb Estate in Grand Prairie, Texas in 1987. Ingredients:
1/2 pound fresh snow peas |
filling |
12 ounces fresh crab well drained |
2 hard cooked eggs finely chopped |
4 tablespoons mayonnaise |
3 dashes hot sauce |
1 teaspoon capers |
3 tablespoons finely chopped celery |
Directions:
1. Wash and split snow peas on top to form boat. 2. Blanch for 10 seconds in boiling water then submerge in cold water. 3. Drain and cool then stuff with 1 heaping teaspoon crab filling 4. To make filling combine all filling ingredients until well mixed. 5. Chill until ready to serve. |
