A delicious little appetizer. Ingredients:
1 1/2 lbs white mushrooms (about 24) |
4 green onions, chopped |
3 garlic cloves, minced |
2 tablespoons fresh basil, chopped |
1/4 cup fresh cilantro, chopped |
1 fresh green chile, seeded and finely chopped |
1 lb crabmeat, shelled and flaked |
2 tablespoons mayonnaise |
1 teaspoon dijon mustard |
1/2 teaspoon freshly cracked black pepper |
6 ounces quality white cheddar cheese, grated |
Directions:
1. Wipe the mushrooms clean with a damp paper towel and remove the stems. Place the mushroom caps in a lightly-oiled, shallow baking dish. 2. Mince the stems. Combine all the remaining ingredients, including the minced stems, and mix well. 3. Spoon the mixture into the mushroom caps and bake in a preheated 350° oven for 15 minutes. Serve warm. Makes about 24 appetizers. |
