Better than eating out for seafood. the fish i use weighs about a pound each. Ingredients:
4 lbs flounder |
salt |
8 tablespoons butter |
1 cup crabmeat |
2 tablespoons olive oil, extra virgin |
1 onion, chopped fine |
1 shallot, chopped |
2 garlic cloves, minced |
2 tablespoons celery, chopped |
2 tablespoons bell peppers, chopped |
1 teaspoon salt |
1/2 teaspoon pepper |
1/8 teaspoon thyme |
1 tablespoon parsley, chopped |
1 egg, beaten |
3/4 cup breadcrumbs |
Directions:
1. Cut a large pocket in each fish, set aside. 2. saute' vegetables in olive oil till soft, then mix with rest of stuffing ingredients. 3. divide stuffing into 4 equal parts and stuff pocket of each fish. 4. melt butter, pour into baking pan. lay fish, dark side down, so they don't overlap. 5. with a pastry brush; brush some of the melted butter on top side of fish. 6. Bake 350 degrees F for about 30 minutes covered or until fish is flaky. Uncover last 5 - 8 minutes. |
