Crab Stuffed Deviled Eggs |

A bit different! Ingredients:
8 hard boiled eggs |
3 tbsp. mayonaise |
2 tsp. fresh lemon juice |
3 tbsp. fresh chopped (very fine) green onions (roots and tops) |
1/8 tsp. black pepper |
1/4 tsp. hot sauce (crystal prefered) |
10 oz. crabmeat |
Directions:
1. Cut eggs lengthwise in half. Take out yolks. Mash yolks. If you want a more crab filled, stuffed egg, reserve half of the yolks. Mix all ingredients escept crabmeat. Fold in crab after mixing. Mound crab in each egg half. Garnish with paprika and/or diced green onion. Let set up for half an hour in refrigerator. |
