Crab Stuffed Chicken Breasts |

This is a fancy take on chicken breasts for special occasions. Very impressive looking and taste awesome with the nutty taste of the Swiss cheese sauce. Ingredients:
6 whole breasts, boned & skinned |
stuffing |
1/2 c herb seasoned stuffing mix |
1/2 c celery |
1/2 c green onion |
1 5 oz can crabmeat, drained |
3 t butter |
3 t dry white wine |
paprika |
sauce |
1/3 c swiss cheese, grated |
1/3 c dry white wine |
3 t butter |
3 t flour |
1 pint half/half cream |
Directions:
1. Prepare stuffing mix. Place butter in mixing bowl and melt in microwave. Add onion and celery & cook 2 minutes, uncovered, stirring once. Add wine, stuffing mix and crabmeat. Mix well. Set aside. 2. Pound chicken to flatten by placing between 2 pieces of wax papaer & pound with rolling pin until thin. Sprinkle with salt & pepper. Divide stuffing among breasts, roll & secure with toothpicks. Sprinkle with paprika. Cover with waxed paper and cook in microwave for 10 minutes turning dish once. For convention oven, melt butter and cook ingredients in saucepan. Bake 375 for 45 minutes. |
