These are like bite-size crab salad sandwiches. Instead of bread, we've used a crisp rice cracker and added a slice of cool cucumber for texture and flavor.
Ingredients:
8 ounces freshly cooked crab
2 tablespoons minced red onion
3 ounces cream cheese
1 tablespoon chopped fresh dill, plus sprigs for garnish
1/4 teaspoon black pepper
1 teaspoon lemon zest
asian-style rice crackers
about 20 very thin slices english cucumber
Directions:
1. Mix crab, onion, cheese, dill, pepper, and zest together. Set crackers on a serving plate and top each with about 1 tbsp. crab salad. Top each with a cucumber slice and a dill sprig.
