Great addition to a *Surf * Turf* night ! Enjoy! :) Ingredients:
1 1/2 lb red new potatoes |
1/4 lb crab meat (cooked) |
2 tb chives -- minced |
1 tb parsley -- chopped |
1 tsp olive oil |
2 tb nonfat mayonnaise |
2 tb nonfat yogurt |
2 tsp lemon juice |
3 tb parmesan cheese |
optional: mixins' finely chopped carrots, broccoli etc. |
Directions:
1. Bake potatoes in a 350 degree oven until tender (30-45 min). 2. Let cool. 3. Cut into quarters. In a bowl, combine all other ingredients. 4. Stir in potatoes. 5. Place into a shallow baking dish. 6. Broil 4 from heat until golden. 7. Serve hot. |
