Crab Portabella Mushrooms |

Great for brunch or a light lunch. Add a nice green salad on the side and some breadsticks. My own creation, I love crab and I am from Maryland, so always looking for something other than crab cakes. Ingredients:
4 large portabella mushroom caps |
8 ounces cream cheese (softened) |
16 ounces crabmeat (lump is best) |
3/4 cup grated cheese (i like sharp cheddar) |
1/4 cup finely chopped celery |
1/2 teaspoon old bay seasoning |
Directions:
1. Gently scoop out inside of mushroom caps. Bake mushroom caps at 350 (F) for 4-6 minutes to soften. Set aside. 2. Mix the creme cheese, crabmeat, celery and Old Bay together. 3. Spoon over mushroom caps and sprinkle with grated cheese. 4. Broil six inches from heat source for 4 - 6 minutes. Watch carefully. Serve immediately. |
