An unusual appetizer. I found it in a Bed & Breakfast and tweeked the recipe a bit to my own taste. Ingredients:
1 lb. crab (picked) |
2 eggs |
1/2 c. pureed squash (cooked) |
3 scallions (chopped) |
1/2 c. cracker crumbs |
1 t. old bay seasoning |
1 t. lemon juice 7 sheets phyllo dough |
ground pecans |
shredded parmesan cheese |
buttery cooking spray |
Directions:
1. Combine crab, eggs, squash, scallions, cracker crumbs, Old Bay seasoning and lemon juice. Set aside. 2. Separate first sheet of phyllo and lightly spray or butter. 3. Sprinkle with Parmesan and cover with second sheet of phyllo. Spray and sprinkle with nuts. 4. Alternate cheese and nuts for remaining sheets. 5. Mold crab mixture in a row on the long edge facing you. 6. Roll all seven sheets to form a tube around crab. 7. Transfer to pre-greased pan. 8. Bake at 350° until golden brown. Cut into 1 strudels. |
