This is a really good appetizer or , if made larger, can make a meal. Serve with lemon mayonniase and it is fantasic. Ingredients:
1 pound lump crab meat |
1 clove of garlic, minced |
1/2 medium onion, minced |
1/2 medium roasted green pepper, minced |
1/2 medium roasted red bell pepper, minced |
1/4 cup fresh minced parsley |
1 stalk celery, mincd without strings |
1/3 cup self-rising corn meal |
1/3 cup self-rising flour |
1/4 cup buttermilk |
1 teaspoon baking powder |
1 teaspoon franks hot sauce |
1/2 teaspoon cajun seasoning (i found that at a dollar store) |
1 egg |
salt and pepper to taste. |
Directions:
1. Combine all ingredients. 2. Mix well. 3. Drop a heaping tablespoon of the mixture into hot oil and fry until golden brown. 4. Drain on a paper towel. |
