Crab-filled Endive Spears |

The filling can be made a day in advance. The spears can be filled an hour before serving and kept refrigerated. The mixture is simple, but delicious! Ingredients:
48 endive leaves (about 5 endives) |
2 7-oz pkgs snow crab, defrosted |
dressing |
2 garlic cloves, minced |
1 chili pepper, seeded and finely diced |
1/4 cup lime juice |
2 tbsp fish sauce |
4 tsp granulated sugar |
1/4cup coarsely chopped coriander (cilantro) |
Directions:
1. Separate endives into individual leaves. 2. Wash and dry well. 3. Drain crab and squeeze dry. 4. Mix all ingredients for dressing together. 5. Toss with crab. 6. Place a heaping teaspoonful of mixture in each leaf. 7. This recipe makes about 48 individual appetizers. 8. At a ratio of three per person, this makes enough appetizers for 16 people. |
