When I first got this in the late 70's we were living in Baltimore and this was a cheap crab meal to serve for a crowd. Those were the days! The price of crab has gone up, but its still RELATIVELY cheap to serve crab to a crowd. Read more . Oh, and it is delicious! Guess it is kinda like a crab strata. Nice for brunches, too. Ingredients:
1 pound crab meat, picked clean |
12 slices bread, slightly dry, crust removed |
6 eggs, hard-boiled |
1 teaspoon onion, dried flakes |
1 teaspoon parsley, minced |
2 1/2 cups mayonnaise |
2 1/2 cups milk |
1/4 cup pimiento, chopped |
1/4 cup green pepper, chopped |
2 tablespoons old bay seafood seasoning |
1 teaspoon worcestershire sauce |
salt and pepper, to taste |
1 cup cheddar cheese, shredded |
1/4 cup corn flakes, crumbled |
Directions:
1. Break bread into small pieces with fingers and mix with crab, eggs, onion, parsley, pimento and green pepper. Mix may, milk, Old Bay, Worchestershire, salt & pepper. Then mix lightly with bread mixture. Turn into buttered 9 x 13 casserole and sprinkle with cheese and then corn flake crumbs. Refrigerate overnight. 2. Remove from refrigerator one hour before baking. Bake at 350 for one hour until puffed and golden. |
