Crab and sweet corn make a lovely combo! Ingredients:
1 tbsp olive oil |
1/2 c green onion, chopped |
2 c corn |
2 c nonfat milk |
2 c fat free chicken broth |
1/2 tsp salt |
1/4 tsp pepper |
1/4 tsp worchestershire sauce |
1/3 tsp thyme |
5 oz nonfat evaporated milk |
2 tbsp cornstarch |
1/2 c mushrooms, chopped |
1/2 lb crab meat |
Directions:
1. Saute green onion in olive oil. 2. Add next 7 ingredients, and bring to a boil. Reduce heat and simmer 30 minutes. 3. Mix evaporated milk and cornstarch. Add to soup and cook 5 minutes stirring occasionally. Soup should thicken. 4. Add crab and mushrooms. Heat through. Adjust seasoning if necessary. |
