Crab Chowder With Snow Peas |

2 cups clam juice |
2 1/2 cups water |
1/2 cup long grain rice |
2 scallions, sliced |
1 tablespoon minced gingerroot |
2 (4 ounce) cans crabmeat |
2 cups snow peas, halved crosswise |
1 tablespoon dry sherry |
1/2 cup milk |
2 cups torn sorrel |
salt and pepper |
Directions:
1. Heat clam juice and water to boiling in a large saucepan. Stir in rice, scallions and gingerroot; reduce heat and simmer, covered, until the rice is tender; about 20 minutes. 2. Stir in crabmeat and snow peas; simmer for 1 minute. 3. Stir in sherry, milk and sorrel. 4. Season to taste with salt and pepper. |
