These are always a hit! I usually double the recipe. Ingredients:
1/4 cup tomato juice |
1 egg, beaten |
1 can crabmeat, drained and flaked |
1/2 cup dry breadcrumbs |
1 tablespoon fresh parsley, minced |
1 tablespoon lemon juice |
1/4 teaspoon salt |
1/4 teaspoon worcestershire |
1/4 teaspoon cayenne pepper (or to taste) |
9 slices bacon, cut in half crosswise |
Directions:
1. Whisk together tomato juice and egg. 2. Stir in crabmeat, breadcrumbs, parsley, lemon juice, salt, Worcestershire sauce and cayenne pepper. 3. Shape into 18 finger shapes. (You may need to chill before shaping) 4. Roll half bacon slice around each. 5. Broil 10 minutes, turning frequently, or until bacon is crisp. |
