This is very rich and creamy. You could always half the recipe if you are serving four or fewer guests.
Ingredients:
1 large onion, chopped
2 ribs celery, chopped
1/2 lb. margarine
4 tbs. flour
1 large and 1 small can milk
2 egg yolks
2 lbs. crab meat
10 oz. mild cheddar cheese
Directions:
1. Sauté onions and celery in margarine until tender. Add flour and blend well. Add milk, blend and remove from heat. Add egg yolks, crab meat, salt, pepper and 8 oz. of cheddar cheese.
2. Pour in casserole dish and top with remaining cheese. Bake (350 F) just long enough to melt cheese.
