Crab, Arugula and Lemon Garlic Mayo Sandwich |

This can easily be made into crab salad if you mix the aioli with the crabmeat. You can also add a few dried chili pepper flakes to the mayo mix if you wish. Ingredients:
4 tablespoons mayonnaise |
1/2 garlic clove, minced |
1/2 teaspoon dijon mustard |
2 teaspoons fresh lemon juice |
salt and pepper |
8 slices crusty white bread |
1 1/2 ounces arugula |
12 ounces fresh white crabmeat |
Directions:
1. Place the mayonnaise in a bowl and beat in the garlic, mustard, lemon juice and a few chili flakes if you wish. Season to taste. 2. Spread the lemon aioli onto all the slices of bread. 3. Arrange the arugula onto 4 of the slices of bread and pile the crabmeat on top. 4. Season to taste then sandwich with the remaining slices of bread. 5. Press down lightly, cut on the diagonal and serve. |
