Found in Cooking Treasures of the Central Coast. Sounded good and I generally have everything in the pantry. If I don't have fresh crab I have used the lump crab meat from Costco. Ingredients:
1 onion, small chopped |
1/2 lb mushroom, thinly sliced |
2 tablespoons salad oil |
2 cups broccoli, coarsely chopped |
1 red pepper, small and chopped |
1/2 teaspoon thyme leaves |
2 cups chicken broth |
2 cups milk |
1 (17 ounce) can cream-style corn |
1/3 lb crabmeat |
3 cups rice, cooked |
salt and pepper |
Directions:
1. Saute onion and mushrooms in oil till limp. 2. Add broccoli, bell pepper and thyme. Simmer till broccoli is tender about 4 minutes. 3. Add chicken broth, milk and corn and stir. Cook uncovered about 10 minutes or until hot. 4. Stir in crabmeat and rice. Simmer uncovered until hot about 2 minutes. 5. Salt and pepper to taste. |
