Crab and Mushroom Fritatta |

I made this up because I love eggs, imitation crab meat, and mushrooms!! I don't even really know if it's a fritatta, just sounds good. Ingredients:
2 large eggs |
1 egg white |
1/2 cup crab delights chunk style |
1/2 cup mushrooms - pieces & stems |
1/4 cup sargento reduced fat 4 cheese mexican shredded cheese |
Directions:
1. In a small frying pan (I use an 8-inch), saute the mushrooms and shredded crab pieces until heated through, or as crispy as you want. In a bowl, mix the eggs and egg white with just a splash of milk, some basil, salt and pepper to taste, plus about a third of the cheese. Lower the heat to slightly below medium, then add egg mixture. Cook until firm enought to flip (5-8 minutes). Sprinkle top with remaining cheese. Cook another 5 minutes on other side. Enjoy! |
