This recipe comes from the Haggar Family that I purchased in Frisco, Texas in 1994. Tried and true and a favorite at my house. Enjoy Ingredients:
2 tablespoons unsalted butter |
3 endive cleaned and minced |
1/4 teaspoon salt |
1/2 teaspoon freshly ground white pepper |
1 cup fresh crabmeat |
3 large eggs |
3/4 cup all purpose flour |
2 cups milk |
Directions:
1. In large skillet melt butter over high heat. 2. Add endive with salt and pepper then sauté 4 minutes. 3. Remove from pan and chill then preheat oven to 450. 4. Butter quiche pan then remove all bits of shell and cartilage and place crab in quiche pan. 5. Add endive then in mixing bowl beat eggs, flour, milk and a pinch of salt until combined. 6. Pour over the crabmeat and endive then bake 35 minutes and serve hot or warm. |
