CRAB AND CUCUMBER ROLLS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Adair Estate in Sulphur Springs, Texas in 1994. Ingredients:
1 large cucumber |
6-1/2 ounces crabmeat |
4 tablespoons mayonnaise |
1-1/2 teaspoons finely grated onion |
1/8 teaspoon salt |
1/2 teaspoon granulated sugar |
5 dashes tabasco sauce |
Directions:
1. Cut ends off cucumber and cut into 3 pieces. 2. Remove seeds with corer making a large cavity. 3. Mix crab, mayonnaise, onion, salt, sugar and Tabasco then stuff into cucumber. 4. Wrap cucumber in plastic wrap and chill then slice into 1/2 thick slices. |
