This is a lovely appetizer and best served hot from the fryer. You can make the batter early in the day and fry them right before serving. Serve with a creole mayonnaise or a bit of hot sauce on the side. So very tasty. Ingredients:
11/2 cups flour |
1 teaspoon baking powder |
1 1/2 teaspoon salt |
1/4 teaspoon nutmeg |
1 tablespoon chopped chives |
1 tablespoon chopped parsley |
1 tablespoon chopped onion |
1 egg white beaten |
3/4 cup beer, flat |
11/4 cup fresh corn kernels |
6 ounces crab |
oil to fry |
Directions:
1. Combine flour, baking powder, salt, nutmeg, chives, parsley, and onion. Stir until just combined. 2. Whisk the egg white until frothy. 3. Stir egg white, beer adn corn kernels into the dry ingredients. Stir until just incorporated. 4. Gently add the crab to the batter. 5. Heat oil to 375 degrees in large saucepan. 6. Drop one tablespoon of batter into hot oil. Cook one minute, turn, and cook for another minute or two until golden brown. 7. Remove from oil and drain on paper towels or a wire rack. 8. Serve hot. |
