Straight from New Orleans Cooking school! Limited computer access- so enjoy! Ingredients:
1/4 cup flour |
1 lb crab meat ( claws ) |
1/4 cup butter |
2 cup chopped green onion |
1 qt heavy cream |
24 oz whole corn with liquid |
1 quart milk |
1 tbs chopped parsley for garnish |
1 cup stock |
salt to taste |
joes stuff seasoning ( or creole/cajun spice blend) |
Directions:
1. combine milk, cream and stock 2. Bring to a boil, simmer 10 to 12 mins 3. Make a rox with equal parts butter and flour to desired color 4. Add to simmering pot 5. Stir in corn with liquid, crab meat 6. simmer 5 mins 7. Gradually add hald green onions, salt and seasoning to taste 8. Use other part of green onions for garnish |
