Simply delicious.... Ingredients:
1 stick butter or 1/2 cup diet butter |
1 med. onion, chopped |
2 stalks chopped celery |
4 green onions, chopped |
2 cans chicken broth (fat free) |
4 tbs flour |
2 bay leaves |
1/4 tsp thyme |
1 lb. of lump white crabmeat |
1 14 oz. can sweet cream style corn |
1 14 oz. can whole kernel corn |
1 quart of half & half (or fat free) |
salt, pepper & cajun seasoning to taste |
Directions:
1. Melt the butter in a large heavy pot. 2. Saute onions, celery, and green onions for 5 mins., DO NOT BROWN 3. Sprinkle flour over seasonings and stir for 5 mins. 4. Add chicken broth, bay leaves and thyme 5. simmer on low fire for 15 mins 6. Add crabmeat and corn 7. Simmer for 20 mins 8. Add heated half & half 9. Simmer 15 mins. 10. Add salt, pepper and cajun seasoning to taste 11. Enjoy! |
