This is a FAST, easy soup recipe. For a tasty variation, add a can of green chiles! Ingredients:
1/4 cup chopped onion |
1/8 cup butter |
1 teaspoon flour |
1/4 teaspoon curry powder |
2 cups frozen corn |
2 cups milk |
1/2 cup heavy whipping cream |
salt |
pepper |
1 (6 ounce) can crabmeat |
Directions:
1. Add onion and butter to soup pot and saute. 2. Add flour and curry powder. 3. Cook for 2 minutes. 4. While this is cooking, chop corn in food processor or blender. 5. Add corn to onion mixture and cook for 5 minutes. 6. Add milk, cream, and salt& pepper (to taste). 7. Bring to boil. 8. Stir in crab meat. 9. Serve hot. |
