Always on the look out for simple crab recipes for when we are on holiday - found this one in a mini cookbook given with an issue of the Australian Good Food magazine. Serves 4 as an entree or 2 as light meal/snack with a salad. Ingredients:
250 g crabmeat (cooked) |
2 tablespoons sour cream |
1 chili (birdseye finely chopped) |
1 tablespoon coriander (leaves finely chopped) |
1/3 cup parmesan cheese (grated) |
1 lime (juice of) |
4 slices sourdough bread (lightly toasted) |
1 -2 tablespoon basil (leaves small to serve) |
Directions:
1. Preheat grill/broiler on high. 2. In a bowl combine crabmeat, sour cream, chilli, coriander, parmesan and lime juice and season to taste and then spread over toasted sourdough. 3. Grill for 2 to 3 minutes until golden and bubbling. 4. Scatter over basil leaves to serve. |
