This is the way my mother prepared spareribs. She too was a fan of vinegary flavors (the Portuguese in us!), and these fit the bill. Just sweet enough, with a little bite of cider vinegar and dry mustard, slowly cooked and satisfying. Prep time includes marinating. Ingredients:
6 lbs spareribs |
2 cups apple cider vinegar |
2 teaspoons black pepper |
4 teaspoons salt |
2 tablespoons brown sugar |
2 tablespoons chili powder |
2 teaspoons dry mustard |
2 teaspoons paprika |
2 teaspoons cumin |
2 tablespoons honey |
Directions:
1. Combine marinade ingredients and marinate ribs in mixture for 4 to 6 hours. 2. My mother's cooking directions: Bake in 450 degree F oven to brown for 30 minutes. 3. When browned, lower temperature to 300 degrees and cook for about 90 minutes more, turning and basting with more marinade every 15 to 20 minutes. |
