This is my Dad's favourite chili recipe, now it's mine too. This is not a spicy, red hot chili recipe. Make it as per the recipe and be prepared to 'spice it up' to taste.
Ingredients:
2 lbs extra lean ground beef
1 onion, chopped
2 garlic cloves, chopped fine
1 tablespoon chili powder
1 teaspoon oregano
1 teaspoon sugar
1 1/2 teaspoons salt
1 teaspoon ground coriander
1 teaspoon cumin
1 pinch hot pepper flakes
2 (28 ounce) cans diced tomatoes
2 green peppers, chopped
2 stalks celery, chopped
2 (14 ounce) cans kidney beans (undrained)
Directions:
1. Brown beef and onion and drain off fat.
2. Mix spices and add to beef and onions.
3. Add tomatoes, gr peppers and celery, simmer 45 minutes.
4. Add beans and simmer another 10 minutes and serve.
