Found this in my recipe box..Haven't made it yet but it's on the list. Ingredients:
2 beef tenderloin steaks |
1/4 tsp. salt |
1/4 tsp. cumin |
1/4 tsp. pepper |
3 tbls. cream cheese, softened |
1/2 4 oz. can green chilies, chopped |
1/2 sheet frozen puff pastry, thawed |
1 egg, beaten |
1 tsp. water |

Directions:
1. Preheat oven to 400 2. Sprinkle beef with salt, pepper and cumin 3. Sear in skillet, set aside 4. In mixing bowl, combine cream cheese and chilies, set aside 5. On floured surface, roll pastry into a 16x12 rectangle 6. Cut into 2 12x8 rectangles 7. Put beef on one side of each rectangle 8. Top with cream cheese mixture 9. Fold pastry over meat and seal seams 10. Put seam side down on baking rack that is on a baking sheet 11. Combine egg and water and brush over pastry 12. Bake 18-22 minutes 13. Let rest 5 minutes 14. Serve with salsa on side |
