This is so good. It is fluffy, cheesy, creamy and zesty. The great combination of flavors shines through. You will get rave reviews. Ingredients:
2 large potatoes with skins on |
8 ounces sour cream |
4 ounces diced green chilies |
1 cup shredded cheddar cheese |
1 teaspoon parsley flakes |
2 tablespoons salsa |
2 teaspoons italian bread crumbs |
paprika for garnish |
Directions:
1. Boil potatoes with skins on for 45 minutes. 2. Cool slightly and peel. 3. Slice potatoes and set aside. 4. Mix sour cream, green chilies, cheese, parsley and salsa in bowl. 5. Line greased casserole dish with sliced potatoes on bottom layer then a layer of cheese mixture. 6. Continue layering potatoes and cheese. 7. When complete sprinkle with breadcrumbs and then paprika. 8. Bake at 325 for 30 minutes. |
