I got this recipe from a cookbook called 101 Things to do with a Slow Cooker Ingredients:
1 pound ground beef, browned and drained |
1 can (14 1/2 ounces) crushed tomatoes |
1 can (14 1/2 ounces) diced tomatoes with green chilies * with liquid |
1 can (15 ounces) whole kernel corn, drained |
1/2 cup dried minced onion |
1 box (6.8 ounces) spanish rice, with seasoning packet |
6 cups water |
*for a spicer version use diced tomatoes with jalapenos. |
Directions:
1. Combine all ingredients in greased 4 1/2 to 6 quart slow cooker. Cover and cook on low heat 4-5 hours. Do not over cook. Makes 4-6 servings. 2. Top with grated cheese and sour cream, if desired. Serve with tortilla chips. |
