This is a recipe I adapted from the pampered chef. It makes a nice side dish or is a welcome addition to an appetizer tray. Easy to make and kid-friendly. Ingredients:
2 large baking potatoes, unpeeled |
no-stick vegetable oil cooking spray |
1/2-3/4 cup tex-mex cheese |
5 slices bacon, cooked,drained and crumbled |
2 green onions, diced |
1/4 cup barbecue sauce |
Directions:
1. Preheat oven to 450. 2. Slice potatoes evenly, about 1/4 thick. 3. Spray baking pan with no stick spray. 4. Place potatoes on pan and bake turning once until golden, about 15-20 minutes Combine bacon, cheese, and green onions. 5. Remove potatoes from oven. 6. Brush tops with barbecue sauce. 7. Evenly spread cheese topping blend on top. 8. Return to oven and bake until cheese is melted. |
