This was a nice little recipe that I found in a Gooseberry Patch cookbook of my MIL's. It is a snap to throw together on a weeknight and my family enjoyed it. It's the base recipe for Cowboy Food and is very easy to manipulate into something terrific. For example, I added a can of diced green chilis, a second can of chili beans and a can of corn to give it some bulk. You could also add hot sauce, to taste. The possibilities are endless! Enjoy! Ingredients:
1 lb ground beef |
1 (4 1/2 ounce) bag spanish rice, prepared according to package directions |
1 (15 ounce) can chili beans |
1 cup cheddar cheese, shredded (it calls for 1-2 cups depending on your tastes) |
Directions:
1. Brown the ground beef in a skillet over medium heat and drain. 2. Add cooked rice and beans and return to heat until bubbly. 3. Stir in cheese and allow to melt. 4. You can also combine all ingredients in a casserole dish and bake at 350 for 30 minutes (bake time not included in prep/cook time). Serve with garlic bread and a salad. |
