These cookies are a great alternative to chocolate chip cookies. They are full of chocolate chips, coconut, oats, and pecans. Ingredients:
2 cups all-purpose flour |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
1 pinch salt |
1 cup butter, softened |
3/4 cup sugar |
3/4 cup packed brown sugar |
2 eggs |
1 teaspoon vanilla extract |
1 1/2 cups old fashioned oats |
1 cup semi-sweet chocolate chips |
3/4 cup pecans, chopped |
1/2 cup shredded coconut |
Directions:
1. Preheat oven to 350 degrees and grease baking sheets. In a medium mixing bowl stir together flour, baking soda, baking powder, and salt, set aside. 2. In a large mixing bowl with an electric mixer on medium speed cream butter and sugars until fluffy. Beat in eggs, one at a time, and vanilla. On low speed gradually add flour mixture and mix just until blended. Stir in oats, chocolate chips, pecans, and coconut. 3. Drop dough by tablespoonfuls 2 inches apart onto prepared baking sheets. Bake for 12 to 14 minutes. Transfer cookies a cooling rack to cool completely. |
