Everyone's favorite summer appetizer. So good we serve it as a salad sometimes. Makes lots....it will disappear in a flash. Ingredients:
2 tablespoons red wine vinegar |
1 1/2 teaspoons tabasco sauce |
2 teaspoons tabasco sauce, green kind (makes the dish....don't leave out!) |
2 teaspoons olive oil |
1 clove garlic, minced |
1 avocado, ripe and firm (optional) |
black pepper, freshly ground |
1 15 oz. can black beans, drained |
1 10 3/4 oz. can corn, drained |
2/3 cup green onions, sliced |
1/2 pound plum tomatoes, coarsely chopped |
jane's crazy salt, to taste |
Directions:
1. Toss all ingredients except avocado & green onion, up to 5 days in advance, and store airtight in the refrigerator. Add avocado (if using) and green onion up to 8 hours in advance, cover and refrigerate. 2. Serve with Tostito Scoops or serve as a salad. |
