Got this one from Costco recipe magazine. Ingredients:
1 (15 ounce) can corn, drained |
1 (15 ounce) can black-eyed peas, drained |
1 avocado, peeled and diced |
2/3 cup cilantro, chopped |
2 -3 green onions, chopped |
3 -4 roma tomatoes, chopped |
1/4 cup olive oil |
1 1/2 cups red wine vinegar |
2 garlic cloves, crushed |
1 tablespoon ground cumin |
salt |
pepper |
Directions:
1. Combine first six ingredients. 2. Whisk together the rest of the ingredients and add to the vegetable mix, toss to coat. 3. Serve with pita chips or tortilla chips. |
