This is a refreshing salsa that can be served with tortilla chips or alone. Ingredients:
1/2 cup brown sugar |
1/2 cup apple cider vinegar |
1/2 cup vegetable oil |
1 red pepper |
1 yellow pepper |
1 orange bell pepper |
1/2 red onion |
4 stalks celery |
1 (15 ounce) can shoe peg corn |
1 (15 ounce) can black-eyed peas, drained |
1 (15 ounce) can black beans, rinsed |
Directions:
1. In a sauce pan mix together sugar, vinegar and oil. While stirring bring to a boil. Set aside to cool. 2. Finely chop peppers, onion and celery. Add remaining ingredients. Mix with cooled dressing 2 hours before serving. 3. Serve with tortilla chips. |
