Super Foods Cookbook Ingredients:
1 1/2 cups chicken stock |
1 cup couscous |
1 1/2 cups corn |
1 cup tomato, chopped |
2 cloves garlic, minced |
1 teaspoon chili powder |
1/4 teaspoon ground cinnamon |
2 tablespoons chives, snipped |
1 tablespoon lemon juice |
Directions:
1. In a saucepan, bring the stock to a boil. Add the couscous. Cover the pan and remove from heat. 2. Let stand about 6 minutes or until all of the liquid has been absorbed. Fluff with a fork. 3. In a large nonstick frying pan over medium heat, combine the corn, tomatoes, garlic, chili powder and cinnamon. 4. Cook until the liquid from the tomatoes evaporates, about 5 minutes. 5. Stir in the chives and lemon juice. Add the couscous and stir to combine. |
