Ingredients:
1 shallot, minced |
1 tablespoon butter, melted |
1/2 cup vegetable broth |
1/2 cup uncooked couscous |
1/2 cup thinly sliced fresh snow peas |
1/2 cup diced orange bell pepper |
1 tablespoon finely chopped fresh chives |
1/4 teaspoon salt |
Directions:
1. Sauté shallot in butter in a saucepan until tender. Stir in vegetable broth; bring to a boil. Stir in couscous, snow peas, bell pepper, chives, and salt. Remove pan from heat, and let stand, covered, 5 minutes. Fluff mixture with a fork. |
