Ingredients:
1 teaspoon(s) balsamic vinegar |
1.5 cup(s) boiling water |
1/4 cup(s) chopped onion |
1/8 teaspoon(s) cinnamon |
1 teaspoon(s) finely chopped garlic |
1 teaspoon(s) fresh mint |
1/8 teaspoon(s) ground cumin |
1 tablespoon(s) lemon juice |
1 tablespoon(s) olive oil |
1 cup(s) quick-cooking couscous |
1/3 cup(s) raisins |
salt and pepper to taste |
Directions:
1. Place raisins in bowl and cover with lukewarm water. Soak about 15 min and drain. 2. Heat oil in sauce pan over low heat and add onion and garlic and cook, stirring, til wilted. Do not brown. Add water, raisins, cinnamon, cumin, salt, and pepper. Bring to boil. Remove from heat and add couscous. Add mint, lemon juice, and vinegar. Cover and let stand 5 min. Uncover and fluff couscous with a fork. |
