Couscous with Plum Tomatoes and Black Beans |

Ingredients:
1 1/2 cups water |
1/2 teaspoon salt |
1 cup couscous, uncooked |
1/4 cup lemon juice |
2 teaspoons olive oil |
1/4 teaspoon ground pepper |
1 (15-ounce) can no-salt-added black beans, drained |
2 cups chopped plum tomato (about 4 large) |
1/2 cup finely chopped fresh parsley |
1/4 cup finely chopped purple onion |
Directions:
1. Combine water and salt in a medium saucepan. Bring to a boil; stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff couscous with a fork; spoon into a large bowl. 2. While couscous cooks, combine lemon juice, olive oil, and pepper in a small bowl, stirring with a wire whisk. Add to couscous, stirring gently. Stir in beans and remaining ingredients. |
