Couscous with Plum Tomatoes and Black Beans

Ingredients:
1 1/2 cups water
1/2 teaspoon salt
1 cup couscous, uncooked
1/4 cup lemon juice
2 teaspoons olive oil
1/4 teaspoon ground pepper
1 (15-ounce) can no-salt-added black beans, drained
2 cups chopped plum tomato (about 4 large)
1/2 cup finely chopped fresh parsley
1/4 cup finely chopped purple onion
Directions:
1. Combine water and salt in a medium saucepan. Bring to a boil; stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff couscous with a fork; spoon into a large bowl.
2. While couscous cooks, combine lemon juice, olive oil, and pepper in a small bowl, stirring with a wire whisk. Add to couscous, stirring gently. Stir in beans and remaining ingredients.
